Red rice is a type of rice that has a reddish-brown colour due to its high content of anthocyanins, which are antioxidants also found in certain fruits and vegetables like blueberries and red cabbage. This type of rice is less processed than white rice, retaining its outer layer known as the bran, which gives it its distinctive colour.
Red rice lowers blood sugar levels, it has a low glycaemic index, which helps to control blood sugar. Diabetic patients should skip white rice, and instead choose red rice. Red rice also has high dietary content thus improving digestion, while reducing weight. It also lowers the risk of cardiovascular disease. Red rice is rich in magnesium, which helps in boosting bone health in the body.
Red rice can be used in combination with normal rice or it can be eaten as red rice khichdi, red rice pulao, red rice biryani etc.
Cooking Instructions: Cook up to 1 to 2 whistles at the lowest flame setting in a pressure cooker. Note that red rice takes longer to cook than regular white rice.
